This is carrot cake, but not the kind you are picturing. No cream cheese frosting, no three layers, no pipework. In Turkey carrot cake is a tea cake: baked in one tray, cut into squares, kept on the counter under a cloth, and eaten in the afternoon with something hot. That is what this is.

The carrot is grated fine and there is a lot of it, which is what keeps the crumb so moist. Cinnamon and orange zest go in with it, sugar stays low, and nothing goes on top. You taste the carrot and the spice instead of the frosting. It is the cake people eat two squares of without thinking about it.
